Pecan Pie

Ingredients:

For the Crust:

  •   11/4 Cups all-purpose flour
  •   1/2 Teaspoon salt
  •   1 Tablespoon cane sugar
  •   1/2 Cup cold vegan butter (or solid coconut oil), cubed
  •   3-5 Tablespoons ice water

  • For the Filling:

  •   1/2 Cup maple syrup
  •   1/2 Cup light brown sugar (or coconut sugar for deeper flavor)
  •   1/2 Cup full-fat coconut milk (canned, shaken well)
  •   1/4 Cup cornstarch (or arrowroot powder)
  •   1/4 cup melted coconut oil or vegan butter
  •   1 Teaspoon pure vanilla extract
  •   1/4 Teaspoon salt
  •   2 Cups pecan halves (lightly toasted for extra flavor)
  • Optional: 2 tablespoons bourbon (for a smoky, gourmet twist)
