Classic White Cake

Ingredients:

  • 2 1/2 Cups all-purpose flour (or cake flour for a lighter texture)
  • 1 1/2 Cups cane sugar
  • 2 Teaspoons baking powder
  • 1/2 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 1 Cup unsweetened almond milk 
  • 1 Tablespoon apple cider vinegar (or white vinegar)
  • 2/3 Cup refined coconut oil, melted 
  • 1/2 Cup unsweetened applesauce
  • 1 Tablespoon pure vanilla extract

For the Frosting:

  • 1/2 Cup vegan butter, room temperature 
  • 1/4 Cup refined coconut oil, room temperature (solid but soft)
  • 4 Cups powdered sugar, sifted
  • 1/4 Cup unsweetened almond milk
  • 1 Tablespoon pure vanilla extract
  • A pinch of salt
