Ingredients:

  • 2 Tablespoons Vegan butter
  • 1 Medium onion, finely chopped
  • 3 Garlic cloves, minced
  • 10 Ounces (about 3 cups) Oyster mushrooms sliced
  • 1 Teaspoon smoked paprika
  • 1 Teaspoon dried thyme (or 2 sprigs fresh thyme)
  • 2 Tablespoons all-purpose flour (or gluten-free flour)
  • 2 Cups vegetable broth
  • 1/2 Cup unsweetened almond milk 
  • 1/2 Cup cashew cream
  • 1 Tablespoon Dijon mustard
  • 1/2  Teaspoon  Salt 
  • 1/2 Teaspoon Pepper
  • 1/4 Cup chopped parsley (for garnish)
