Ingredients:

  • 1 Cup yellow cornmeal
  • 1 Cup organic flour
  • 1/4 Cup Cane sugar 
  • 1 Tablespoon baking powder
  • 1/2 Teaspoon baking soda
  • 1/2 Teaspoon Himalayan salt
  • 1/4 Cup unsalted butter, melted
  • 2 Tablespoons Grape-seed oil
  • 1 1/4 Cups Almond milk with 1 tablespoon lemon juice or vinegar 
  • 1/4 Cup blue agave (for sweetness and moisture)
  • 2 flax eggs: 2 tablespoons ground flaxseed + 6 tablespoons water, let sit to thicken)
  • 1 cup corn kernels (fresh, frozen, or canned—optional but adds a five-star texture boost)
